Rather than use the voice over tool in Final Cut Pro consider using Soundtrack Pro to record voiceovers as it is able save the captured audio to a useful location.
Final Cut Pro's voice over tool will always capture to the capture scratch, not great when you have been thinking to clean your drive once a project is complete and are trying to archive the media that didn't come from the tape.
